Avatara Unveils A 12-Course Exploration Of Contemporary Indian Vegetarian Cuisine

Rooted in technique-driven Indian cuisine, Avatara’s 12-course menu brings together carefully selected ingredients, contemporary techniques and thoughtful flavour pairings. Each course is designed to highlight the natural character of its ingredients while introducing unexpected combinations, textures and presentations that reflect the restaurant’s modern approach to vegetarian dining.

The 12-Course Journey

1. Yogurt — saffron, sugar, cacao pod
2. Wasabi Greens — daikon, mustard greens, ghevar, wasabi
3. Butternut — black lime, finger lime, gram flour
4. Avocado — cumin, gherkin, balsamic pearl
5. Aloe Vera — pomelo, kokum, coconut, watermelon
6. Corn — tonburi, shishito, fenugreek
7. Banana — tamarind, coconut, curry leaf
8. Asparagus — pea protein, green garlic, bamboo shoot
9. Onion — tomato, Byadagi chilli, star anise
10. Passion Fruit — rice grain, guava, passion fruit, raspberry chocolate
11. Jackfruit — teardrop peas, spinach, kaffir lime
12. Condensed Milk — bal mithai, mava, chocolate, sugarcane

About Chef Omkar Walve

Chef Omkar Walve, born and raised in the vibrant city of Mumbai, discovered his love for cooking from a young age while helping his mother at local food stalls and fairs. His career took a significant leap in 2017 when he joined the Trèsind Group and later emerged as a creative force in Dubai’s all-vegetarian fine-dining restaurant, Avatara. In 2023, he was honoured with the prestigious MICHELIN Guide Dubai Young Chef of the Year award for his pivotal role in crafting Avatara’s 16-course vegetarian tasting menu. Inspired both by the guests he cooks for and the team he works alongside, Omkar is committed to learning, evolving and pushing the boundaries of vegetarian cuisine.
