FOOD · UPDATED OCTOBER 2026

piehaus and 852 Bakery Bring Chicago Comfort and Ube Together for counter culture edition 006

Chef Milan Jurkovic and Chef Kelvin Cheung turn personal favourites into two limited-edition phyllo creations, available from 2–16 October.

Dubai, United Arab Emirates, 1 October 2026 — Six editions in, piehaus’ counter culture is getting bigger. For the first time, the piehaus collaboration series is moving beyond its home and into the collaborator’s own space.

From 2–16 October, piehaus comes together with 852 Bakery by Jun’s and Chef Kelvin Cheung for counter culture edition 006, with two limited-edition creations available at both piehaus and 852 Bakery.

Created by piehaus as a platform to bring chefs and creatives into its world of handcrafted phyllo, counter culture explores what happens when different food cultures and culinary perspectives meet the piehaus kitchen. Edition 006 takes that exchange one step further, with the series travelling into the collaborator’s space for the first time.

Two Pies, Two Backgrounds

For this edition, Chef Milan Jurkovic and Chef Kelvin Cheung find common ground between their different backgrounds through two new pies.

The Chicago Dip Pie (AED 82) connects Milan’s childhood memories of ćevapi in the Balkans with Kelvin’s memories of Italian beef sandwiches in Chicago, bringing together two takes on beef, bread and comfort in a crispy phyllo pie served with beef jus for dipping.

The Little Ube Pies (AED 44) draw on a shared connection to Filipino food, pairing ube with kajmak cream, glossy pecans and white chocolate for a sweet meeting of Filipino and Balkan influences.

“Counter Culture is about understanding what our collaborators genuinely love to eat and seeing what happens when those references meet the world of piehaus. Kelvin brought so many personal influences into this edition, and it felt like the right moment to let Counter Culture travel beyond piehaus for the first time.”

— Chef Milan Jurkovic

“Milan grew up eating ćevapi in the Balkans and I grew up eating Italian beef in Chicago. They come from completely different cultures, but carry the same feeling of beef, bread and comfort. That’s what this collaboration became about for us: different places, same feeling.”

— Chef Kelvin Cheung
